Raw Pecan Loaf

This sweeties are from Naturally Sassy. This raw loaf is very simple and fast to prepare. You only need pecans. another type of nut you like, dates and ginger. There are NO REFINED SUGARS, NO PROCESSED FATS, NO FLOUR and NO EGGS. This loaf is incredible sweet oily and delicious! This dessert is perfect for a Christmas dinner because is has pecans and ginger.

Pecans are the highest nuts in antioxidants. The other nut I used was macadamias, which are the highest in essential fatty acids. The other ingredients are ginger zest and dates.

To make the raw loaf you only need those four ingredients and a food processor. When you have the batter, transfer it to the bread mold and store it in the freezer. Once it is firm (about an hour), take it out from the freezer and cut it in eight thin slices. If you eat them at freezer consistency, then you can call them Raw Ginger and Pecan Biscottis and you can enjoy them with your choice of milk, tea or coffee. But if you store them in the refrigerator, then you will have a soft Raw Ginger and Pecan Loaf.WP_20160722_009

Ingredients:

yield: 1 loaf (8 thin slices or 4 thick slices)

1 cup pecans

1 cup macadamia

2T ginger zest

3/4 cup dates

Procedure:

1- In a food processor, place the nuts and ginger until flour consistency.

2- Now, add the dates until dough consistency.

3- Transfer the dough to the loaf mold and store in the freezer for one hor.

4- Take out and cut in slices.

5- Store back in the freezer or in the refrigerator.
